Why Not Just Use Cheap Table Sugar?
Experienced brewers avoid using standard grocery store table sugar in large amounts because when yeast are forced to break down high concentrations of sucrose, they often produce off-flavors. It can stress the yeast, causing them to throw off volatile sulfur compounds or an apple-like ester called acetaldehyde. In the homebrew world, a beer fermented with too much table sugar is often described as tasting thin, harsh, and "cidery."
Brewing sugar keeps the yeast completely happy, leading to a much cleaner fermentation and a higher-quality final product.
